Grilled Heirloom Tomato Salad with Burrata Cheese

Ingredients:

  • 4 large heirloom tomatoes (various colours)
  • 8 oz burrata cheese
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic glaze
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh arugula (optional)
  • Salt and freshly ground black pepper to taste
  • 1 clove garlic, minced
  • 1 tsp sea salt (for grilling)
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions:

  1. Prepare the Tomatoes:

    • Wash the heirloom tomatoes and slice them into thick rounds, about 1/2 inch thick.
    • Place the tomato slices on a large plate or tray and sprinkle both sides with sea salt. Let them sit for about 10 minutes. This will help to draw out some of the moisture and intensify the flavor.
  2. Grill the Tomatoes:

    • Light your restaurant-grade charcoal approximately 30 minutes in advance to allow it to reach the appropriate temperature.
    • Pat the tomato slices dry with paper towels.
    • Brush both sides of the tomato slices with olive oil.
    • Place the tomato slices on the grill. Grill for about 2-3 minutes on each side, until they have nice grill marks and are slightly softened. Be careful not to overcook them, as they should still hold their shape.
  3. Prepare the Dressing:

    • In a small bowl, whisk together the minced garlic, remaining olive oil, and crushed red pepper flakes (if using). Set aside.
  4. Assemble the Salad:

    • Arrange the grilled tomato slices on a serving platter.
    • Tear the burrata cheese into pieces and place them over the tomatoes.
    • Drizzle the garlic olive oil mixture over the tomatoes and burrata.
    • Drizzle with balsamic glaze.
    • Scatter fresh basil leaves and arugula (if using) over the top.
    • Season with salt and freshly ground black pepper to taste.
  5. Serve:

    • Serve immediately while the tomatoes are still slightly warm and the burrata is creamy.

  • Tomato Selection: Use a variety of heirloom tomatoes for a colourful and visually appealing salad.
  • Balsamic Glaze: You can make your own balsamic glaze by reducing balsamic vinegar over low heat until it thickens, or use a store-bought version.
  • Burrata Cheese: Burrata is best served fresh and at room temperature to ensure its creamy interior is at its best.
  • Grill Variation: If you don't have a grill, you can use a grill pan on the stovetop or broil the tomato slices in the oven.
